For as long as I can recall, I have had a recurring dream of me walking through a hallway toward a door with my name on it and on the way to the door I catch a reflection of myself in a window and I'm wearing a white jacket. A professional one, like a doctor's white coat. For many years I chased that dream and the auspicious title. Obstacle after obstacle presented itself along the path. Frustration ensued. After a while the frustration had me thinking it may have been a white jacket tied behind my back! I felt I was constantly pursuing a seemingly unattainable goal.
Many years later, I found myself face to face with the girl in the white coat. All along I had been chasing the wrong white coat! There is a prayer I lean on. A simplistic prayer that speaks to the heavens, the universe and all the angel spirits who have gone on to the next world who continue to look in on my adventures. The prayer is simply this, "bless it or block it". Now I realize the power that phrase contains and how it has led me directly to the place I am intended. My relentless insistence believing that I knew what was meant for me caused such a time delay! How frustrating it must have been for my angels to continue to throw obstacles in my path to prevent me from following the wrong one. How persistent they were to continue helping me find my footing, feel the passion and persist even when I didn't understand it.
During the pandemic I saw an advertisement for Auguste Escoffier School of Culinary Arts offering an online program for Patisserie Arts. At first, I was enormously skeptical about doing a program like that online. I was immediately proved wrong by the caliber or chef instructors, their immaculate attention to even the slightest of details and the intensity of the curriculum. Eighteen incredible months later creating amazing desserts, perfecting their plating, soaking up as much of the extraordinary chef instructor experiences possible, I am now donning the white coat that was intended for ME.
